I always encourage sustainable foraging, we share these plants with other living beings and only take with gratitude what will not be missed.

Autumn is full of berries, nuts and roots. The energy of the plants has gone into the seeds, or is slowly going to sleep in the root through the winer. We’ll look talk about preparations that we can make with these autumnal ingredients and how can we preserve plants healing properties for winter colds, flue, or runny noses, and how we can support the immune system. We’ll also talk about edible and other useful plants and how can we enjoy them in our in home, kitchen and garden.

    MORE ABOUT OUR PONTACK SAUCE

Made with foraged elderberries and a carefully balanced blend of organic apple cider vinegar, onion, ginger and spices, our Pontack Sauce offers a layered flavour that builds gently rather than overpowering a dish. The elderberries bring a deep, rounded fruit character, while the vinegar keeps the sauce bright and sharp. Onion adds savoury body, and the ginger and spices bring warmth and subtle complexity, helping each ingredient work together in a way that feels both rich and versatile.

This balance is what makes Pontack Sauce so useful in the kitchen. The fruity sharpness can lift dressings and marinades, while the savoury-spiced notes sit comfortably alongside gravies, soups and slow-cooked dishes. Used sparingly, it can deepen flavour without masking the rest of the ingredients on the plate, making it a good choice when you want something distinctive but not heavy.

Because the sauce is built from a small number of well-chosen ingredients, each element has room to contribute. The elderberries bring character, the apple cider vinegar adds clarity, the onion rounds things out, and the ginger and spices create a gentle finish that lingers. Together, they create a condiment that feels at home in everyday cooking but still offers something a little different from more familiar cupboard staples.

DISCOVER THE DEPTH OF ELDERBERRY PONTACK SAUCE

Our Pontack Sauce brings together foraged elderberries with organic apple cider vinegar, onion, ginger and spices to create a condiment with depth, brightness and gentle warmth. The elderberries give it a dark fruit character, while the vinegar adds lift and definition. Onion provides a savoury backbone, and the ginger and spices help tie everything together for a finish that is subtle, rounded and full of interest.

That combination makes it an easy addition to a wide range of dishes. It can sharpen a dressing, enrich a marinade, add complexity to gravy, or bring extra depth to soups and sauces without dominating them. If you enjoy ingredients with a strong sense of place and a more distinctive flavour profile, Pontack Sauce offers a simple way to bring wild food character into everyday cooking.
